Today we honour one of our favourite Summer snacks – the Ice Cream Sandwich. What better way to celebrate Summer than with 10 delicious ice cream sandwich recipe ideas.
BARBECUED DOUGHNUT ICE CREAM SANDWICH
Courtesy of Tesco, these ice cream sandwiches are one of our favourites because they’re so easy to make. All you need is five ring doughnuts, 400g of vanilla ice cream and 200g of raspberry jam.
Griddle the doughnuts ‘til marked then cut in half. Top with three small scoops of ice cream and drizzle with jam, before covering with the second half of the doughnut.
If jam and cream isn’t your thing, fear not, these are really easy to customize. You can replace the ice cream with mint chocolate chip ice cream and sprinkle with chocolate chips or how about using chocolate ice cream and drizzling with caramel sauce?
OREO BROWNIE
This indulgent treat mixes the best of both worlds – fudgy brownies and creamy, biscuity oreo cookie ice cream. If you don’t fancy making your own ice cream, buy any ready made cookies and cream ice creams from any good supermarket.
ETON MESS
We love the classically English flavours of these Eton Mess Ice Cream sandwiches. The cream, meringue and strawberry combo Is a perfect ending to any evening meal. For a cheat’s version, sandwich a dollop of store-bought vanilla or strawberry ice cream between some ready-made meringue nests.
M&M ICE CREAM COOKIE SANDWICHES
If you love M&Ms you’ll love this tasty ice cream sandwich recipe. We did one batch with peanut M&Ms and the other with plain M&Ms for a bit of variety. Why not serve with a cold glass of milk or a nice cup of tea.
For a quick version, get your favourite large, chewy chocolate chip cookies from a supermarket. Cover with your favourite flavour of ice cream – how about honeycomb? – and top with another cookie.
BELGIAN WAFFLE & VANILLA ICE CREAM
Syrupy Belgian waffles + your favourite ice cream = the most gorgeous ice cream sandwich you could ever imagine!
If you don’t have a waffle-maker, sandwich whatever flavour of ice cream you love best between two store-bought waffles and sprinkle with crushed honeycomb and some golden syrup
REESE’S PEANUT BUTTER CUP ICE CREAM SANDWICHES
We cannot put into words just how tasty these are. If like us, Reese’s Peanut Butter cups are one of your favourite treats, you cannot not love these too.
Just place one or two Peanut Butter cups (without the wrappers onto one large cookie, microwave for a few seconds until slightly melted, remove from the microwave top with some vanilla or caramel-flavoured ice cream and top with another cookie.
LEMON BLUEBERRY CHEESECAKE ICE CREAM SANDWICHES
These lemon and blueberry cheesecake-flavoured ice cream sandwiches taste just like Summer – fruity and fun! Instead of using the chocolate chip cookies we recommend using digestives instead, so it has proper flavours of a cheesecake. Simply divine!
CHOCOLATE AND CHERRY ICE CREAM CUPCAKES
Chocolate cupcakes AND ice cream?! Yes please! These chocolate and cherry flavours taste of our favourite childhood Black Forest gateau. Plus there’s no need to make anything yourself, so they’re super simple to make!
CHURROS ICE CREAM SANDWICH
This ice cream sandwich recipe will take a bit more effort, but they’re well worth it. Although you can use any ice cream flavours, we recommend chocolate, dulce de leche or classic vanilla. Sprinkle with cinnamon sugar for an extra burst of flavour!
PROFITEROLE & SALTED TOFFEE
We love profiteroles so these are super tasty. Again, use vanilla ice cream. For an extra treat, we recommend topping with any of your crushed favourite toppings. From honeycomb and peanuts, to Maltesers, KitKats or some chopped up Twix, the possibilities are truly endless!
