Easter Pudding Ideas

As a time for family, Easter is a brilliant time to make some delish desserts! With this in mind, here are six super-tasty Easter pudding ideas that you’re sure to want seconds of. We’ve even included a plant-based option too!

1) EASTER BISCUITS RECIPE

These Easter-themed biscuits are so easy to make and taste amazing too. The recipe lets you make some that are iced and others with a jammy middle, because variety is the spice of life. If apricot jam or lemon curd isn’t to your taste, try some with raspberry or strawberry jam.

These biscuits look great and taste excellent!

2) HOT CROSS BUN TRIFLE RECIPE

Nothing says Easter sweet more than a slightly toasted, buttery hot cross bun. This hot-cross bun trifle takes this classic bun and turns it on its head for a boozy dessert that adults will love.

Simply tear some torn hot cross buns at the base of a large glass trifle bowl, then slowly pour over your booze of choice (sherry, brandy or Cointreau works best!), so it soaks into buns.

Melt butter in a large frying pan, then cook some sliced apples and pears over a mid-high heat for 5 minutes, stirring occasionally, until they begin to soften and turn golden, then add peaches and scatter with sugar. Once cooled, arrange the fruit over the buns and drizzle with caramel sauce, so it seeps between the layers.

Mix the mascarpone with mixed spice and sugar until blended. Add cream and gently mix again until soft. Spoon over this mixture on top of the fruit and gently push to the edges using the back of a spoon.

Pour over some fresh custard and, again, swirl to the edges of the dish using the back of a spoon.

Finally for the topping, whip the cream until soft peaks form, then carefully spoon it on top of the custard in peaks. Scatter with some chopped pecans to finish and serve. If your guests are coming later, chill the trifle for up to 6 hours before serving!

3) MINI SIMNEL LOAVES RECIPE

Making ten mini loaves, this mini Simnel cake recipe modernizes the traditional Easter Cake. The weaved basket-effect marzipan looks really impressive and the mini flower icing decorations really represent springtime.

4) FLOURLESS VEGAN CARROT CAKE

This flourless carrot cake doesn’t fall down on flavour!

Enjoy this vegan, flour-free carrot cake. It may not have flour or refined sugar, but that does not mean it skimps on flavour. The optional dairy-free icing is wonderfully tasty, or alternatively, try this delicious vegan cream cheese frosting recipe.

5) CHEESECAKE-FILLED EASTER EGGS

Have you ever heard of anything as gorgeous as a cheesecake and Easter egg combo? Neither have we! This Easter dessert looks so impressive when serving at the end of an Easter meal. Your family and friends are sure to love this biscuity, creamy and chocolaty treat too!

All you do is separate the Easter in half along the seam. Pour some crushed digestives in a bowl and bash into crumbs. Melt some butter in a saucepan and stir it into the crumbs until the mixture looks like wet sand, then spoon the mixture into the halves and pat gently. Pop in the fridge to chill and set.

Combine the mascarpone, soft cheese, icing sugar and cocoa together until smooth. In a separate bowl beat double cream to soft peaks with a whisk. Gently fold this whipped cream into the mascarpone, then spoon this filling over the chilled cheesecake bases in the Easter eggs. Level out the surface, then chill for at least a couple of hours or overnight until firm and set. For any excess filling, spoon into glasses over extra crumbs for another tasty treat!

Top the set cheesecake-filled chocolate egg halves with chocolate mini eggs, cookie pieces or other shop-bought Easter treats, drizzle with caramel or melted chocolate.

Now enjoy!
