MOTHER’S DAY RECIPE IDEAS – BREAKFAST IN BED

Starting the day with a delicious breakfast in bed is a luxury your mum unlikely enjoys regularly. Here are a few simple yet festive ideas to surprise her.

Begin with breakfast in bed.

STRAWBERRY AND LEMON CURD CREPES

These delicious crepes are as easy to make as traditional pancakes. The lemon curd also reminds of the traditional British pancakes, whilst fresh strawberries add a punchier note and make the recipe a whole lot fancier. Lemon curd is very easy to make with just five ingredients (or you could buy ready-to-use lemon curd from the supermarket), and you can prepare everything the night before for faster crepe making in the morning. Simple and versatile, this recipe can also be adapted to meet gluten-free or vegan dietary requirements.

ROASTED MUSHROOM AND BACON DUTCH BABY

Also known as a German pancake, this savoury deliciousness sounds more complicated than it is. In reality, it is a sort of omelette, and all you need to make it is a cast iron pan or skillet and a handful of ingredients that are readily available in all supermarkets. Despite its simplicity, the Dutch baby looks fantastic and is very tasty – a great alternative to the more common scrambled eggs.

SWEET POTATO, BACON, AND EGG BREAKFAST TACOS

Tacos may not be your mum’s go-to breakfast. Thus, they are an excellent option for a surprise breakfast in bed. This recipe is not only ridiculously easy, but it’s that type of recipe you can shape to your liking. For instance, you can make a regular skillet breakfast with scrambled eggs, bacon, and sweet potatoes and use it to fill tacos shells. Or you could ditch the bacon and use mushrooms to create a vegetarian delight.

MOTHER’S DAY RECIPES IDEAS – AFTERNOON TEA

The afternoon tea is the best excuse to indulge in sweet and savoury treats whilst sipping a glass of fizz! You may not have the time to cook and bake a variety of treats, but these simple recipes could be just right.

Mark the occasion with a special afternoon tea.

SMOKED SALMON AND DILL TART

Pairing perfectly with a glass of Prosecco or champagne, smoked salmon is delicious and healthy at the same time. Making this smoked salmon and dill tart may require a bit more skills than a breakfast recipe, but you won’t have to spend ages in the kitchen. Cut thin slices when ready and arrange them on a tiered serving tray for a beautiful visual effect.

VEGETARIAN SAUSAGE ROLLS

Rolled puff pastry, cream, mature cheddar cheese, and a handful of other ingredients can make the best vegetarian sausage rolls. Despite the vegetarian in the name, these rolls are a savoury treat everyone loves – meat-eaters included. If you don’t have the time or skills to make puff pastry at home, simply use the store-bought variety. The result will be equally delicious.

COFFEE AND WALNUT SPONGE CAKE

An alternative to the traditional Victoria sponge cake, a coffee and walnut sponge cake is one of the easiest desserts to make. The coffee and walnut flavours blend in a swirl of deliciousness no other flavour combination can achieve. For an even easier but tasty dessert, get yourself a brownie tray and bake some perfect brownies to share with your mum on this mother’s day afternoon tea.

MOTHER’S DAY RECIPES IDEAS – 3 COURSE MEAL

Pampering your mum on mother’s day 2021 should go beyond breakfast in bed and afternoon tea.  Create these delicious Mother’s Day recipe ideas and Impress Mum with a 3-course dinner and a beautiful bouquet of her favourite blooms.

FISH STARTER – INDIVIDUAL SMOKED SALMON TERRINE

A salmon starter isn’t only for Christmas! These elegant, smoked salmon terrines are absolutely delicious and they’re ridiculously easy to make. Serve with a cucumber salad, or some crusty white bread if you’re feeling particularly indulgent.

VEGETARIAN STARTER – STUFFED PORTOBELLO MUSHROOMS

Among the multitude of appetizers, stuffed mushrooms are the most likely to please everyone. The cheddar and goat’s cheese blend perfectly and balance the traditional recipe. Vegans may simply replace the cheese with tofu, or you could add some shredded bacon and sausage to add a dash of originality to the classic recipe.

MAIN COURSE – CHICKEN STUFFED WITH CHEESY GARLIC BUTTER MUSHROOMS

For Mother’s day, why not update the classic roast, with creamy, cheesy indulgent mushroom-stuffed chicken. Not only is this traditional meal super-easy to make in a single pot, but the classic flavours can satisfy most palates. Pair the chicken with the perfect roast potatoes, seasonal veg and a glass of white wine, like Sauvignon Blanc or Chardonnay.

VEGAN MAIN COURSE – VEGAN SHEPHERD’S PIE

Vegans and vegetarian Mums may not appreciate chicken, but they’ll surely like a vegan shepherd’s pie. The secret to a delicious vegan shepherd’s pie is the nutritional yeast that gives it a delicious cheesy flavour, whilst the veggies give it an exquisite taste. This pie is easy to make, and you can freeze the leftovers, so don’t worry if you make too much of it!

DESSERT – BANOFFEE TRAYBAKE

Who can say no to chocolate, toffee, and banana blending their flavours in perfect harmony? Instead of a Banoffee pie, this traybake variant makes it a lot easier to cut into pieces – or you could use a brownie tray for baking individual squares. A dessert wine, mimosa cocktail, or a blood orange mojito mocktail are the best drinks for ending your dinner in style.

With so many Mother’s Day recipe ideas, we hope you’re now inspired enough to pamper your mum with a full day of cooked meals. But what if you’re not a too skilled chef or don’t live with your mum? Ordering a mother’s day brunch or 3-course meal from her favourite restaurant will not only make your mum happy but gives you the opportunity to help a local business.
