In case you missed it, National Vegetarian Week is underway. Promoting the benefits of a veggie diet, what better way to celebrate it than with tasty vegetarian pasta recipes.
1. SPAGHETTI AND QUORN MEAT-FREE BALLS
Your entire family will adore this meat-free version of Italian spaghetti and meatballs. Sauté a chopped onion in a saucepan for five minutes. Add in the garlic, balsamic vinegar and red wine then reduce for a minute. Add in tomato purree, chopped tomatoes and veggie stock. Simmer for 20 minutes.
Preheat your oven to 200C/180C (Fan)/ Gas Mark 6. Place your meatless balls on a baking tray and cook for 20 minutes. Cook the spaghetti as per instructions and set aside. Season tomato sauce, add the balls and toss. Serve the spaghetti with a dollop of meatballs and tomato sauce. Add a generous helping of veggie parmesan too!
2. GORGEOUS MAC AND CHEESE RECIPE
BBC Good Food call this the ‘Best Ever Macaroni Cheese recipe’. When you taste it you’ll understand why! The addition of mustard and crunchy breadcrumb topping makes this a real delight..
3. GARLICKY MUSHROOM GNOCCHI
Ready in under half an hour, this creamy, garlicky mushroom gnocchi recipe is fab when you’re short on time. Wilt some spinach over a colander using boiling water. This pot has a handy built-in colander perfect for the job. Grab a large frying pan and soften an onion. Add some oil, mushrooms, garlic and gnocchi. Cook until the mushrooms are softer and the gnocchi is crisp. Stir in the stock and spinach, bring to the boil and simmer for about five minutes. Stir regularly so the gnocchi is coated in sauce.
Finally top the gnocchi with dollops of Philidelphia Garlic & Herbs, letting it melt in. Season and serve immediately with a side salad or bread roll!
4. RED PEPPER PESTO PASTA
Of all our vegetarian pasta recipes, this homemade pepper pesto recipe is one of the quickest to make. Just boil the pasta as per packet. Next, pop the other ingredients in a food processor and pulse until chunky. Slowly add oil, vinegar, cheese, herbs and seasoning then pulse to combine. Pop the pasta in a pan, add the pesto and toss together. This meal will serve four!
5. ONE-POT TOMATO PASTA
With a sprinkle of garlicky breadcrumbs for a tasty twist, you will love this tasty vegan tomato pasta recipe. After gently frying some breadcrumbs add some garlic and thyme, then cook till golden brown. Set aside.
Soften and brown an onion in a pan then add garlic and thyme. Cook for a minute and add more thyme. Chop some tomatoes – this chopping board is immense! Add tomatoes and vinegar to the pan and season, stirring well. Bring to simmer.
Cook the spaghetti in the tomato sauce. When ready, divide into two bowls and scatter with breadcrumbs – yum!
6. SPINACH, RICOTTA AND PINE NUT LASAGNA
This classic veggie lasagne recipe is a favourite at Casa JML. Best enjoyed in the garden with a crisp, cool glass of white wine or lemonade!
7. CHEESY BROCCOLI PASTA BAKE
Super satisfying and mega-tasty, this broccoli and cheddar pasta bake will be a hit this Vegetarian Week! It’s also very easy to make and a great meal if you’re on a budget.
8. AVOCADO FUSILLI PASTA
The avocado in this recipe’s sauce makes this dish so creamy and delish. A great way to use up over-ripe avocadoes, it’s delicious warm or cool.
9. RATATOUILLE PASTA BAKE RECIPE
Packed full of gorgeous vegetables, this pasta bake is a taste of the Mediterranean! For ease, why not use a pack of frozen Mediterranean vegetables? Serve with a gorgeous green side salad or on its own.
10. ROASTED VEGETABLE AND GOAT’S CHEESE LASAGNE
Last but not least, another tasty veggie lasagne recipe. Prep with fresh or ready-made lasagne sheets, serve this with a light side salad or some garlic bread!
